Five courses, Rooted in terroir. Finished by fire.
First Course: Citrus-Cured Snapper with Fennel & Smoked Fish Spread on Crostini.
served with 2 white wines:
Di Sipio 2023 Pecorino Terre di Chieti Abruzzo Italy
Enjoyabilityfactor 91 Rating
The pecorino is a light golden yellow. On the nose, aromas of ripe peach, mirabelle, exotic notes of mango, citrus and banana and almost perfumed notes of wild rose petals delight. On the palate, the wine is extremely fruity, spicy and full-bodied with a juicy and straightforward acid structure. The long finish is carried by a salty minerality and spicy-fruity aromas. A wonderfully harmonious white wine that is already enormously fun to drink at a young age, but also has a storage potential of 5-10 years.
Vigneti Massa 2023 Piccolo Derthona Piedmont Italy
Deliciously clean and refreshing. Notes of citrus, stone fruit, and honey on the nose. On the palate, its concentrated citrus and stone fruit notes – think mandarin, lemon, and apricot – alongside honey, a touch of dried herbs and spices, and a savory underlayer.
Second Course: Summer Salad of Watermelon, Pickled Onion, goat cheese & Mint with Za’atar.
served with:
Cantine San Marzano 2023 ‘Tramari’ Rose di Primitivo Salento IGP Puglia Italy
Tramari Primitivo Salento IGP is a wine that is presented in the glass with a fascinating bright and shiny pale pink color. On the nose the scent is intense and persistent of Mediterranean scrub, with hints of cherry and raspberry. In the mouth the wine is fresh and elegant, balanced on the palate and satisfying with good acidity and a very light persistence.
Third course: Smoked Lion’s Mane Mushroom & celeriac summer puree and baby beet drizzle white balsamic.
served with:
Giovanni Viberti 2021 Barbera d’Alba La Gemella Piedmont Italy
Wine Spectator 91 Rating
This is dark and rich, yet fluid, offering blackberry, boysenberry, plum and violet flavors. Supple and harmonious, leaving a mouthwatering finish. Drink now through 2028.
Fourth course: Cold Lamb Shoulder with Pickled Mustard Seed & Sweet Onion jam.
served with:
Produttori del Barbaresco 2020 Barbaresco Piedmont Italy
Wine Advocate 95 Rating
The 2020 Barbaresco boasts an ample set of aromas with wild cherry, blue flower, sweet spice and crushed limestone. As always, the wine paints an exciting and authentic portrait of Nebbiolo, albeit with a little more richness and texture in this vintage. This is especially true in terms of the palate, where the wine offers mid-weight intensity with melting tannins.
Fifth course: Fire-Rubbed Beef with Smoked Eggplant & Herbed Pangrattato.
served with:
Altesino 2019 Brunello di Montalcino Tuscany Italy
Jeb Dunnuck 95 Rating
Pouring a rich ruby color, the 2019 Brunello Di Montalcino offers an attractive nose of cherry candies, sweet herbs, polished leather, and orange oils. It moves seamlessly to the palate with equally harmonious structure and a great, long finish. Medium to full-bodied, it lasts for ages. This is one of those wines that’s going to have a very wide drinking window and is exceptional already.
