Big Salt 2025 White Blend

Big Salt is dry, aromatic and zippy. Salty lemon, ginger and aloe vera leap out of the glass. A short skin contact gives the palate textural complexity. In it’s youth, Big Salt continues to be Muscat forward, but we find as it ages into summer that Gewurz comes to the forefront, while oceanic citrusy Riesling shines after a year in the bottle. Not that anyone is aging Big Salt, but you’ll be rewarded if you do!

One wine that will never be rated, nor see a top 100 list is the Chalk Hill RRV Chardonnay. That’s not a bad thing – it’s just the winery’s ‘secret Chardonnay.’ It’s never released to the general public or retail, only a few hundred cases are made each year to service the restaurant industry. But luckily for us, I’ve got a restaurant. And while the Sonoma Coast bottling is definitely the ‘calling card’ that you’re used to seeing from this great estate, I’m telling you the Russian River Valley Chardonnay blows that one out of the water. It’s a Nicholas wines all-time favorite.

Pretty, blackberry, dried-tobacco and herbal aromas and flavors. Medium-bodied, mouth filling flavors and a delicious fruit finish. A blend of 50% Merlot, 45% Cabernet Sauvignon and 5% Cabernet Franc located a stone’s throw from Chevalier’s famed vineyards in Graves. Based on a special selection of vineyard lots handpicked by Deroncourt and vinified by Bernard’s team at Domaine de Chevalier, the Clos des Lunes aims to be little more modern in styling with an excellent quality-price ratio.
