This cuvée is aged for 10 months, 30% of the wine resting in oak barrels and 70% in stainless steel tanks. This approach differs from the classic Chablis style, which usually matures entirely on steel. The partial ageing in wood gives the wine a fuller structure and subtle woody notes, without losing the lively freshness and minerality so typical of the Chablis terroir. The result is an elegant and gourmet wine, in which the minerality, the expression of the fruit and the gentle influence of the wood are beautifully balanced.
