The 2023 Chablis from Domaine de Chaude Écuelle is a dry and elegant white wine that perfectly expresses the Kimméridgien terroir of Chemilly-sur-Serein, in the heart of Burgundy. Made from 100% Chardonnay grapes, hand-harvested and vinified in stainless steel, it undergoes complete malolactic fermentation and ages for 10 months on the lees, without any oak. In the glass, it appears a bright straw yellow with greenish highlights. On the nose, it releases fresh notes of green apple, lemon, white-fleshed fruit, and aromatic herbs, with mineral nuances. On the palate, it is dry and vibrant, supported by a pleasant savory finish and a creamy texture. Ideal with oysters, crustaceans, mollusks, and refined fish dishes, it is also perfect as an aperitif or with light ethnic cuisine.
