The wine is aged for a minimum of 12 months in bottle before release, but most vintages see further bottle ageing.

    Matured in a cool cathedral-style bodega, hallmark of Andalucian maturation process, the 1994 Don PX is a hugely complex and intense wine, made with Pedro Ximénez grapes harvested in mid-August and laid under the sun for 7 to 9 days to concentrate all their sugars. After the press, it was left to rest for 12 months in stainless steel tanks and, when the period came to an end, it was stored in American oak butts for 27 years. The result is a concentrated luscious wine with mahogany color and iodized tones, revealing pronounced aromas of raisinsined fruits, orange peel citrus, liquor ice, coffee, cinnamon and cocoa, with a sweet, velvety taste. Lip-smackingly good!
