2010 base; 40% chardonnay, 30% pinot noir, 30% meunier; just 7-8% pinot noir red wine from Mareuil-sur-Ay, more for aromatic effect than colour; partial malolactic fermentation; 9g/L dosage; DIAM closure). Some 20% of Billecart's production is rosé (400,000 bottles), claimed to be the biggest proportion of rosé in Champagne. The utter restraint of the house places delicate rosés very close to its heart, dubbed internally 'champagne rosé' rathern than 'rosée champagne'… Epic refinement of pale salmon hue and gorgeously restrained red cherry, strawberry and rose petal nuances. Delightfully understated, eminently fresh and elegantly persistent, it carries with grace and poise amodst fine chalk mineral texture, taut acid focus and impeccably pure persistence.
