The classic Provence Rosé profile is what every serious winemaker around the world attempts to mimic and for good reason. The goal is to find the delicate balance between floral, herbal, wild red fruit (not overly ripe), stone fruit and acid. Aromas and flavors lead by ripe White peach, Wild raspberry, chamomile tea, rosemary accompanied by a bead of minerality. A somewhat silkier fuller mid palate than previous vintage with zing of acidity at the finish to balance and encourage the next sip. It’s Pop ’N for sure! The winery doesn’t want singular big flavors, we want more nuance, energy, soul and personality.
