    Symposium 2022 Bordeaux Supérieur

    Price range: $15.99 through $84.00

    Bordeaux France
    Enjoyabilityfactor 90 Rating
The soil of the vines is silicate and clay with pebbles in the subsoil. The vines are at least 25 years old. The grapes are selected at the sorting table with 100% destemming. Fermentation takes place at a controlled temperature between 28 and 30°C for 8 to 10 days, followed by an additional maceration of approximately 25 days, and malolactic fermentation. The wine is then aged for 6 months in oak barrels, 50% in new barriques and 50% in used barriques. The Symposium is deep dark. On the nose, it offers abundant fruit and a richness of fresh red berries such as cherries, some plums, and blackberries, with a light spiciness. The palate is flattering, maintaining the pronounced fruit at the forefront. But the Bordeaux freshness and the tannins are noticeable and very well integrated. A blend of 60% Merlot, 25% Cabernet Sauvignon and 15% Malbec.

  • Aviary Birds of Prey Red Blend

Aviary Birds of Prey Red Blend

    Price range: $16.99 through $162.00

    Napa Valley California
Our Birds of Prey Red Blend is inspired by the guardians of our vineyards. Owls by night and raptors throughout the day, birds of prey hunt in our vines allowing us to naturally manage the vineyards without pesticides. As homage, this wine is big, bold, and balanced. It is dark garnet in color with aromas of brambleberries, cassis, cigar box, spice, almonds, and chocolate. The round palate offers a memorable profile of red fruits, dark chocolate, and a subtle tea leaf that lingers. Enjoy this wine with food, or on its own, curled up by a fire with loved ones. This “Bird” tastes fantastic now and will continue to devlop and age beatifully over the next ten-plus years.
