    Grenache is picked slightly overripe, and only ferments briefly with whole bunches before alcohol is added, thereby stopping fermentation while there is still a considerable amount of residual sugar in the wine. The wine then macerates for another approx. 6 weeks before pressing. The palette is round and soft, without becoming alcohol-heavy. Here are lots of both red and black berries, and a nice little seasoning at the end.

    Bastide Miraflors is a 70-30 blend of Syrah and Grenache, aged in demi-muids and concrete tanks, respectively. There’s a hint of peppermint, but the primary focus here is on the fruit, ranging from blueberries and mulberries into darker notes of plum and dark chocolate. It’s full-bodied and creamy in texture, with deliciously supple, soft tannins, which make it exceptionally easy to drink now, but maybe not particularly long-lived.

    Today the 7ha farm is composed of vines inherited in Côte de Beaune (2.80 ha) and vines bought in Côte de Nuits (4.30 ha) on 16 different appellations: Gevrey-Chambertin, Nuits-Saint-Georges, Pommard, Volnay, Puligny-Montrachet… All vines are owned. Pinot Noir represents nearly 95% of the grapes produced, supplemented by Chardonnay and Pinot Gris.
    The average age of the vines is important (nearly 55 years) which explains the complexity of all the vintages. The estate works in reasoned struggle with certain methods inspired by organic farming. The harvest is carried out manually and all the grapes are usually 100% destemmed. The fermentations are gentle, derived from indigenous yeasts by limiting extraction. Aging is carried out in oak barrels at about 30% new barrels for 16 to 18 months depending on the year. The result? Authentic, precise wines, both elegant and in a delicate style.
