    The soil of the vines is silicate and clay with pebbles in the subsoil. The vines are at least 25 years old. The grapes are selected at the sorting table with 100% destemming. Fermentation takes place at a controlled temperature between 28 and 30°C for 8 to 10 days, followed by an additional maceration of approximately 25 days, and malolactic fermentation. The wine is then aged for 6 months in oak barrels, 50% in new barriques and 50% in used barriques. The Symposium is deep dark. On the nose, it offers abundant fruit and a richness of fresh red berries such as cherries, some plums, and blackberries, with a light spiciness. The palate is flattering, maintaining the pronounced fruit at the forefront. But the Bordeaux freshness and the tannins are noticeable and very well integrated. A blend of 60% Merlot, 25% Cabernet Sauvignon and 15% Malbec.
